Extraction

Mustard essential oil is obtained by water distillation of the seeds macerated in hot water; it appears as a yellow liquid with a strong, pungent, and penetrating odor.

Property

Mustard essential oil is toxic and irritating, so much so that it is considered one of the most highly dangerous essential oils. For this reason, it should never be used as is for aromatherapy purposes, either internally or externally. A powerful bactericide and antiseptic, it should be handled in minimal doses and with extreme caution.

Uses

Mustard essential oil has always been an indispensable and sought-after ingredient in mustards; hence its widespread use in the food industry as a flavoring for condiments and sauces. However, it is completely unused in perfumery.

Botany

Native to Eurasia, mustard has spread to many regions of the world, from Siberia to southeastern Europe, North Africa, and the Americas. It is an erect plant up to three meters tall with lanceolate leaves and yellow flowers clustered in panicles.
