Botany
Native to southern Asia, ginger is widely cultivated throughout the tropical regions, from India to Jamaica and even Japan. It is an erect herbaceous plant up to a meter tall with white flowers clustered in spikes and a very thick, tuberous, rhizomatous root, which, when candied or in syrup, makes a highly prized sweetener everywhere. For millennia, ginger has been used (especially in the East) both as a seasoning and as a medicinal remedy (especially for treating digestive problems).
