Sweet fennel essential oil is obtained by cold pressing the seeds and appears as a clear, almost colorless liquid, with a warm, herbaceous-camphoraceous odor with aniseed undertones.

The beverage industry uses it extensively in soft drinks and liqueurs.
Botany
Native to the island of Malta, fennel is now grown primarily in France, Italy, and Greece. It is a herbaceous plant up to two meters tall with laciniate leaves, golden yellow flowers, and a taproot.
